This recipe was inspired by my love of Cherry Ripes that no longer form part of my diet. This is a healthy alternative to the sweet treat however I must emphasis that even natural sugars should be a treat on the odd occasion as they still can cause a number of health issues short and long term. So make this pretty looking slice and share it with your friends and family so you are not tempted to eat the lot! :p
Ingredients
Base
1 cup of cashews
6 dates
1tsp vanilla essence
3 TBS coconut milk
Berry Cream Filling
1 can of coconut milk refrigerated over night
1 cup of your choice of berries
2 TBS of maple syrup
Chocolate Topping
1/2 cup of coconut oil
1/4 cup of sugar free cocoa
2 TBS maple syrup
Instructions
Base
- Line a loaf tin with baking paper
- Blend ingredients in a high powered blender
- Pour dough into loaf tin and press down
- Put in freezer while making the remaining toppings
- Carefully open the coconut milk. The cream and water will have separate so gently remove the cream and pop it into your blender. Use the remaining milk in your next smoothie
- Add the berries and maple syrup to the blender and blend until nice and creamy
- Pour over the cashew base
- Return to the freezer for an hour or two
- If coconut oil is not already a liquid gently warm it until it is
- Wisk all the ingredients together to make a chocolatey liquid
- When Berry Cream Filling is solid and chocolate topping is cool but still a liquid pour the chocolate over the cream filling
- Freeze for 5-10 minutes
- Remove from freezer 5-10 minutes before serving
